All of the north of Italy is famous for the egg fresh pasta making. But Parma, Bologna and Modena are the capitals of this skill and technique. Here in London we want to reproduce at its best some of the traditional dishes that are now famous all over the world such as tagliatelle alla Bolognese and tortelloni.
We will learn about the basic ingredients, egg and flour, meat, cheese.
